Instructions

  • Combine the flour, salt, and yeast in a large mixing bowl.
  • Combine thoroughly.
  • Mix in the warm water with a wooden spoon until a shaggy dough forms.
  • Knead the dough for 5-10 minutes on a floured surface, or until smooth and elastic.
  • Return the dough to the bowl and cover with a damp cloth for 1 hour.
  • Punch the dough down and fold in the chopped black olives.
  • Knead the dough for about 1 minute.
  • Form the dough into a loaf and place it on a baking sheet that has been greased.
  • Allow it to rise for 1 hour, covered with a damp cloth.
  • Preheat the oven to 425 degrees Fahrenheit (220 degrees Celsius).
  • Bake for 25-30 minutes, or until the bread is golden brown.
  • Allow it to cool.
  • Crush garlic cloves and combine with egg yolk, Dijon mustard, lemon juice, salt, and pepper to make aioli.
  • Whisk in the olive oil slowly until the aioli is emulsified and creamy.
  • Aioli should be served with the olive bread.
