Instructions

  • Drain the tomatoes and keep the juice aside.

  • Cook until the drained tomatoes begin to break down, about 10 minutes.
  • Bring the reserved tomato juice to a boil.
  • Simmer for 30 minutes, stirring occasionally, on low heat.
  • Remove from the heat and set aside for a few minutes to cool.
  • Puree the mixture with an immersion blender or in a blender after adding the chopped parsley.
  • Season to taste with salt and black pepper.
